I'm gonna post up a recipe Ive been using that i think is pretty fail-safe. Feel free to post up some more, especialy if they're easy! I'd love to give them a try
~~~ Salmon and Vegetable casserole in brackets are my substitutions 2-4 ppl
15g butter (olive oil) 1 onion, chopped 1 carrot, chopped 1 stick celery, chopped (ive used chinese cabbage, broccoli, w/e is in the fridge) 1/2 C brown rice, cooked (white works, brown has more fibre tho) 1 egg 1 T tomato paste (T=tablespo0n; tomato sauce) 90g mushrooms, sliced 1 small red pepper, chopped 220g can salmon, undrained (tuna + brine) 130g can whole corn kernals, drained (canned baby corn) 1 T chopped chives 1/2 C grated cheese
(generally need: rice, salmon/tuna, veggies, you dont need them all but they add flavour)
1. Combine butter, onion, carrot and celery in a dish, cover and cook on HIGH 5 mins. (yes a microwave recipe! Mine is an 800 Watt microwave. Use a microwave safe dish that can hold all ur ingredients. Basically put in all the thick veggies that will take a while to cook for this part.) 2. Add rice, lightly beaten egg, tomatoe paste, mushrooms, red pepper, undrained salmon, corn and chives, mix until well combined. 3. Sprinkle with cheese, cook on HIGH for 8 mins
